The success to make any good mutton biryani is tender meat and cooking it the right way.Mutton has to be marinated with yogurt and oil that helps to tenderize it very well. If you are using meat that is not tender or if you are unsure about how tender it is, use meat tenderizer, which is available in most grocery stores.

Mutton Biryani Recipe

Ingredients

Mutton 1 kg
Rice 1 kg
Yogurt 500 gms
Onions 3 large
Tomato 2 small
Oil 250 gms
Salt, redpepper according taste
Turmeric 1/4 tsp
Ground corriander 1 tsp
Garam masala 2 tsp
Mint leaves 4 to 5
Zeera 1/2 tsp
Green chillies 2
Food color(liquid)2 tsp
Lemon liquid 3tsp
Garlic 4 tsp minced
Ginger 3 tsp minced

Method

Wash mutton thoroughly and drain well. Add ginger garlic paste, salt, turmeric, biryani masala, red chili powder and lemon juice. Add curd and oil now put the mixture to marinate well leave it for 4 hours. This will tenderize the mutton. Now heat the pain and add raw spices in it after two minutes add onion and fry them well. Add marinated mutton and cook on very low flame. Add coriander and mint leaves. Meanwhile boil the rice in other pan with some salt and zera. When mutton tenderizes well layer the rice with cook mutton cover that and leave on low heat for 15 minutes. Ramadan Mutton Biryani is now ready serve it with raita.
